Why does jam need more than sweetness to set?

Sweetness is only one part of a jam’s structure. Pectin forms a network, and different pectin types gel under different combinations of sugar, acidity, and calcium. Replacing sugar with something equally sweet therefore does not automatically reproduce the same chemistry.
